Barbecue turkey skewers
300g turkey breast, diced into chunks
1/2 pineapple, peeled, cored and diced into chunks
1 orange, red or yellow bell pepper, deseeded and diced into chunks
2 red onions, peeled and cut into wedges (Don't cut the end off, this will hold them together)
2 garlic cloves, crushed
Zest and juice of a lime
2 tsp smoked paprika
Squeeze of good honey
Ground, black pepper
Handful of wooden skewers, soaked in water for an hour*
*Tip* These barbecue beautifully but I'd recommend using a grilling basket so they don't stick.
Submerge the wooden skewers in water, Or use metal ones!
Add the diced turkey, onions and peppers to a bowl, and mix in the honey, paprika, lime, pepper and crushed garlic.
Leave to marinade in the fridge.
While the turkey mingles, peel, core and dice the pineapple.
Add the pineapple to the bowl of turkey and coat in the marinade just before you're ready to assemble the skewers. Don't leave it in there as the acid in the fruit makes the turkey go weird and woolly. Yuck.
Build your kebabs in any order you like.
Barbecue or grill until the turkey is cooked through.
Turkey is very low in saturated fat. It has just 0.3g of saturated fat per 100g.
