Breakfast pancakes

Serves 2

Ingredients:​

  • 1 large banana, mashed to a smooth purée

  • 2 eggs, separated

  • Pinch of baking powder

  • Pinch of brown sugar 

  • 1 tsp of cholesterol spread

  • 2 tbsp quality maple syrup

  • Sprinkling of chopped pecans and walnuts 

  • Blueberries

Method:

  • Mash the banana in a big bowl.

  • Beat in the egg yolks until well combined. Add the pinch of sugar and a pinch of baking powder and mix in. 

  • In a separate bowl, beat the egg whites until fluffy and peaky. Using a big metal spoon fold them into the banana mix. 

  • In a frying pan, melt the cholesterol spread and then spoon in 1/4 of the batter.

  • Cook until golden on one side, before flipping over.

  • Serve with a drizzle of maple syrup and topped with the bloobs and nuts.
