Breakfast pancakes

Ingredients:​

1 large banana, mashed to a smooth purée

2 eggs, separated

Pinch of baking powder

Pinch of brown sugar

1 tsp of cholesterol spread

2 tbsp quality maple syrup

Sprinkling of chopped pecans and walnuts

Blueberries
Method:

Mash the banana in a big bowl.

Beat in the egg yolks until well combined. Add the pinch of sugar and a pinch of baking powder and mix in.

In a separate bowl, beat the egg whites until fluffy and peaky. Using a big metal spoon fold them into the banana mix.

In a frying pan, melt the cholesterol spread and then spoon in 1/4 of the batter.

Cook until golden on one side, before flipping over.

Serve with a drizzle of maple syrup and topped with the bloobs and nuts.
