Emily's chocolate bark

  • 400g 70% dark chocolate

  • 50g white chocolate

  • Shelled and chopped pistachios

  • Dried rose petals

  • Zest of 4 clemetines

  • Break up the chocolate and place it in a bowl, hovering over but not touching a saucepan of water.

  • Gently heat the water and in turn very gently melt the chocolate. Do the same for the white chocolate. Heating gently means it won't split.

  • Pour the chocolate out onto a piece of parchment. Spread to thin out if necessary.

  • Then using a spoon, drizzle the white chocolate over the top.

  • Leave to get slightly cool, but do not allow to get totally hard.

  • Sprinkle over your chosen toppings. They will sink securely into the chocolate.

  • Allow to solidify, but don't refrigerate as it will alter the formation of the chocolate and make it lose its lustre.

  • Once cool, smash into shards and either eat, or gift to people.
