Vegan Green vegetable salad
Serves 6+
Ingredients:

400g or thereabouts of french beans, runner beans or a mix

A handful of garden peas, raw or cooked

A handful of small broad beans, cooked

200g baby new potatoes, halved

3 tbsp soya yoghurt (or regular 0% fat yoghurt)

Juice of 1 lemon

Black pepper
Method:

Cook the vegetables to your liking.

Leave to cool and mix in a large bowl.

In a small bowl or jug, mix the yoghurt, lemon juice and black pepper.

Pour over the veggies, stir through and serve as a side.
