Vegan Green vegetable salad

Serves 6+


  • 400g or thereabouts of french beans, runner beans or a mix 

  • A handful of garden peas, raw or cooked

  • A handful of small broad beans, cooked 

  • 200g baby new potatoes, halved

  • 3 tbsp soya yoghurt (or regular 0% fat yoghurt)

  • Juice of 1 lemon

  • Black pepper


  • Cook the vegetables to your liking.

  • Leave to cool and mix in a large bowl.

  • In a small bowl or jug, mix the yoghurt, lemon juice and black pepper.

  • Pour over the veggies, stir through and serve as a side.
