Mulled apple cocktails

Ingredients:​

  • 2 ltrs cloudy apple juice

  • 3 clementines or satsumas, halved, squeezed and plopped into the pan

  • 1 lime, sliced 

  • 2 cinnamon sticks 

  • 2 star anise

  • 4-6 cloves, depending on taste

  • Nutmeg, freshly grated

  • Good quality honey, squeezed in to taste (about 1-2 tbsp)

  • Bottle of good spiced rum

Method:

  • In a big pan, pour in the apple juice and put over a low heat.

  • Add the fruit, spices and honey, reduce the heat to as low as possible and cover. Allow to meld together. Your house will smell amazing.

  • Don't allow it to get too hot or it will reduce and all you want it to do is mingle.

  • Pour a 25ml shot of rum into a heatproof glass and top up with a ladelful of the spicy apple. Yum.
